Headless commerce is a way of building an online store in which the storefront customers see is separate software from the commerce engine that holds products, prices, carts and orders, with the two connected through an API. The engine stays; the 'head', the part people look at, is built to your own design.

The idea in one picture
In a conventional store, one platform both stores the catalogue and draws the pages, using a theme. In a headless store those two jobs are split:

Shopify's own definition is the same: an e-commerce model where the front-end presentation layer is separated from the back-end functionality.
A plain example
A clothing brand keeps Shopify for its catalogue, stock, checkout and orders. Its website is not a Shopify theme. It is a separate application that asks Shopify, through an API , for products and prices and draws the pages itself. The same engine can then feed a mobile app or an in-store screen. Shopify offers its own framework for this, Hydrogen, with hosting called Oxygen, and also allows any other framework.

Who should not use it: if a standard theme already does what the store needs, headless costs more and delivers nothing the customer can see. Shopify's own guide says that a business prospering on a traditional architecture may not find it worth the money and time. Frequently asked questions
Is headless commerce faster?
It can be, because the storefront is built and tuned for one store. It is not faster by default: a poorly built headless storefront is slower than a good theme. Speed comes from how the storefront is built, not from the word headless.
Do I lose my Shopify admin if I go headless?
No. Products, inventory, orders and checkout stay in the commerce platform and your team uses the same admin. What changes is the storefront, which is no longer a theme.
Who should not go headless?
A store that a standard theme already serves well. Headless adds a second system to build, host and maintain, and most design changes then need a developer.
